The Amatrice menu draws inspiration from various Italian regions and traditions. Our menu features egg pasta paired with ragu, and non-egg pastas paired with classic Roman sauces, plus a few Italian classics. As our venue name suggests, one of our signatures is our take on the iconic sugo all’ Amatriciana.

About our pasta
Here at Amatrice, we import our dried pasta directly from the towns of Campofilone and Amatrice, north of Rome. We do this to honour the rich traditions of Amatrice and the ancient methods of Campofilone. We preference the dried pasta because it provides the ideal al dente texture and is the traditional choice for Roman pastas.
While travelling many years ago, Dave (one of the owners) met a pasta-making family in Campofilone. He learned about the ancient recipe, local produce, pristine mountain water, and the traditional production methods that cannot be replicated in Australia. Maccheroncini di Campofilone (angel hair spaghetti) is the only egg pasta in the world to receive a geographical certification, in recognition of the 600 year old recipe and strict production methods. We are excited to be able to bring this special pasta to Australia.
